The event begins with the collection of samples in October and November. Each sample is chemically and organoleptically analyzed. At the closing ceremony, the following are organized:

• education with guest appearances of eminent domestic and foreign experts,
• exhibition of equipment for olive growing and olive oil production (30-40 exhibitors),
• gala dinner and distribution of plaques and prizes for participants.
